Cupcakes and Candles.

Today is the boyfriend’s birthday and although 21sts have been well on there way this is where the season really kicks off. It’s a three or four a week deal… Goodbye liver*… ah student life!! :P

Anywho, for Rich I made him 21 cupcakes with a candle on each one. 13 of them spelt out ‘happy birthday’, another being a giant ’21’ (which squashed and destroyed the aesthetics of its cupcake, but, ah well, sure it should still be delish) and the last seven were meant to spell out Richard, but such candles could not be found in time…so seven generic ones had to do :)

With the cupcakes, I took a photo of each one (of course) and got them printed to put in a wee handmade card, that’s just how I roll. That card was then dropped off last night so he could wake up sweetly to 21 candles and the 21 kisses can be sorted by the lads… I’m all hallmarked out!! Ha!

The top photo is the test shot of the mother’s brack I took whilst I waited for the cupcakes to cook. I shant share all those photos as; (i) they were a present for Rich and not for the world to ‘right click’ – save, (ii) they were so not picturesque. As you can see, I’m no Nigella Lawson…

Merry Christmas

Today was a blissful Christmas. It was simple, but it was great :)

At the start of this day we shared presents and started the food prep before all getting together and going for a walk down the pier. The sky was glorious which deserves an entire post of its own… still in wonder of the red sunset sky.

We then made the dinner, had the dinner, before going and sleeping it off in-front of the TV with a fire burning bright.

There were movies, there was magic, and there was moments that only come once, every year, on this day.

Mid-Month Memoirs

I have to first apologise to all of you who tune in. I have been terrible at posing my ‘December Days‘ photos onto flickr, where I promised that’s where they would be. I have been so busy I’ve only been getting them onto my facebook album, so here they are on mass :)

I also must apologise to all those waiting for great things as of Friday. College ended yes, but my painful migraine returned, my laptop lost complete functionality and I still had a job to attend to. Tomorrow however is the first day in a very VERY long time that I don’t have lectures, assignments or work just a ridiculously lengthy to-do list… but top of that list is PHOTOS.

The photo of the day for tomorrow WILL be my dear engineering friend Aoife… (click ‘here‘ for even more of her procrastination splender).. Which was meant to be for today (before that yesterday, and before that Friday) but now that I have a technological solution to my laptop woes, they can and will be up tomorrow! HUZZAH :) After that I have a post on VDP, spanning a range of events, including a Panto, and a ball.

Ideas are endles, my brain is sore.

Here tis a jolly festive photo post to start the week…

Since it’s getting really really cold it may just be another white Christmas yet and if not, at least a snowman can always be found on the top of an iced cupcake instead of an iced lawn.

The top photo is the one I’ve shown for day five of ‘December Days‘ and the rest are seasonal treats, in more ways then one ;)

Orange Noms

Like i promised… here is how I made the orange slices shown in this weeks Saturdays Seven. These taste like a supersplit and are delish.

Ill explain this using my example of a mixture that makes 2pints (roughly 1 litre) of liquid.

It really couldn’t be simpler and for it all you need is;
– Oranges (I used 8 )
– Jelly mix
– Boiling Water
– Spiced Rum (I went with good ol’ Captain Morgans… who else!)
– A sharp knife
– Muffin tray

Step ONE…

Cut oranges in half and squeeze the juice into a bowl. Sieve the juice to get rid of the pulp and save it until later to add to the jelly mix.

Step TWO…

Scoop out the middle of the oranges and place aside.


In a bowl mix together the jelly mix with 1/2 pint (250ml) of boiling water. Stir the mix until it becomes clear and there are no clumps left. This should only take 2-3 minutes.

Step FOUR…

Add another 1/2 pint (250ml) of the orange juice from the oranges to the mixture and continue to stir until mixed in well.

Step FIVE…

Its now time for the SPICED RUM, noms!.. Add roughly a pint (500ml) to the mixture and again stir (but gently.. this mix has now become gold). If too strong add less rum and more juice, completely depends on individual taste and aspired intoxication level!

Step SIX…

Go back to the halved scooped out oranges. Place them into a muffin tin to give them a place to sit soundly. MAKE SURE they sit with the tops straight or delisious orange jelly goodness will SPILL once pored in. Remember; this is now a golden mix so spilage will result in alcohol waistage… this is bad… you dont waist alcohol… no no no!


Pour delisious mixture very carfully into the halfed oranges remembering the value of this liquid… its not just any-old jelly mix.


Now, with a very steady hand, carefully and smoothly relocate the muffin tins to the fridge for cooling and solidifying of the jelly.

Step NINE…

Once the Orange Jelly mix has set take the halfed oranges out of the fridge and with a VERY sharp knife cut them into segments and arrange on a tray.

Step TEN…

Bring them to zee partay for enjoyment.

Alternatively if the orange slices are beyond your bother and all you want to do is get quickly wasted, then the mixture can be pored into disposable shot glasses. Also, if they are being made for the novelty of the jelly slices the alcohol can be left out and be substitued with more water and juice… if thats yo thing!

Finally for different arangements i highly sugest scooping out lemons and adding vodka instead of the rum or even with scooped out limes and gin!
